It all started over a glass of wine…

Jamie and Michelle met in 2017 in Breckenridge, CO. They bonded over their love of food–he’s a vegetarian, she’s a vegan–but realized there were very few places for them to eat in Breck.

Jamie’s skills in the kitchen started over 20 years ago. He comes from the city of Brotherly love and arrived here in Colorado in 2010 to spread joy to and love to everyone he meets in the land. He fell in love with vegetarian and vegan cuisine, realizing the health benefits, he has continued on that path for the last 10 years. Jamie most recently was as a personal chef in Summit County for the last four years. Jamie’s go to is an americano with oat milk and agave. For breakfast an everything bagel gringo style and for lunch he leans towards The Balboa or The Green Olivia.

Michelle moved to Denver in 2009. While she loved the city she is a small town girl at heart. In 2016 she moved to Breckenridge to enjoy mountain life and raise her family here. Michelle loves the outdoors, her favorite season up here is summer for the abundance of great trails to run. As a vegan, Michelle noticed how few restaurants in Breck catered to her dietary needs. She tasted some of what Jamie made as a personal chef, and LOVED it! Michelle’s go-to is a Americano with oat milk and lavender. For breakfast the can’t even vegan as a bowl and for lunch a smoothie and vegan chickpea bagel!

So, when it came time to combine forces (for good, of course), Michelle and Jamie wanted something that would provide fresh, delicious, and healthy food they’d both want to eat. They wanted to create something where you could fuel your body and feel full and healthy to continue to enjoy the outdoor activities Summit County has to offer.

In 2019, they found out a location they wanted was going to be available. They bought it, and made it into the Semplice Cafe. They opened their doors January 17, 2020. In addition to the yummy food, they proudly serve local roasted coffee from Breck Coffee Roasters, located in the town of Breckenridge. They chose Breck Coffee Roasters, for their delicious coffee, sustainability passion, local roots and well pairing of alternative milks.
